It took us a while to find our kitchen, as we of course only would settle for a place licensed to cook and bake for people, with human-safety standards. When we finally came across this little cake shop run by an English man who wanted to move to the South, we knew, this is it. This is COOKA’s Kitchen.

Where we
source our
ingredients
Fresh Meat & Poultry
Our meat is delivered directly to our kitchen from Cooka’s favorite meat merchant Senhor Nuno, who also supplies the local restaurants and shops.
Dairy & Fats
We only use additive-free cheese from the Azores, those beautiful unspoilt Atlantic islands, where cattle grazes free and our lard is traditionally made in Portugal. (We admit, it was a challenge to find 100% natural pork fat).
Fruit & Vegetables
Our fruit and vegetables are always farm-fresh from the near-by markets and our berries are purchased frozen from the chilly section of our next-door supermarket.
Flour & Superseeds
Our flour comes from a small family-run mill in Mafra, the same mill that supplies the regional bakeries for their famous country bread. We are proud to use local produce from small farmers whenever possible, only some seeds and spices are impossible to source next door.

FEED GRADE, SO WHAT DOES IT REALLY MEAN?
Feed grade refers to the quality of a finished product which is not suitable for consumption by humans. It is only legally allowed to be served to animals because of the ingredients it contains or how it has been processed. Further, it may include by-products, additives or fillers.
Cooka simply does not approve of feed-grade. When she was a little puppy she would just stalk away from her bowl, patiently waiting till we brought our own food to the table. Maybe it’s her nose, maybe she has a sixth sense, or maybe she is just spoiled, whatever the reason, we vowed to follow her instincts and only use human-grade ingredients. From our plates, to the plates of our dogs!
