“Go bananas” is slang and the origin is a bit hard to pin down. It became popular in the 50s, around the same time as “go ape” was a common expression, so there might be some association between apes, bananas and crazy behaviour…?

19th-century British chemists sold carob to singers, as chewing on these pods was said to help maintain healthy vocal cords and soothe and cleanse the throat.
